Yummy Joes and Fajita Soup

We had the fajita soup this week with unexpected company and it was a hit. Me and my sister want the recipe! I might call you Marianne or if you have a minute could you post it?

So the Lasagna rolls that I did last time is better baked uncovered. I put covered in the directions because I'm paranoid about food drying out but there is plenty of liquid.

I will be out of town the whole week before our swap. If you need freezer space you can bring it by the week before. I'm leaving Monday morning. I also might not be back before 12:30 on Friday, so maybe we could bump the time to around 4:30 or 5:00. D track will be off and it is a Friday, but it's right before dinner and you might score a meal you could just go home and eat. I ask around as well.

5 slices bacon
Lawry's fajita mix (I found this brand is the best).
1/2 green pepper, diced
1/2 red pepper, diced
1 onion, diced
1 can corn, reserve water
1 can crushed Mexican style tomatoes(I just use my bottled tomatoes from my garden)
3-4 chicken breasts, cut into bite-sided pieces
3-4 cloves garlic, chopped fine
3 cans chicken stock (or bullion and water).
1/4-1/2 tsp oregano to taste

Fry bacon and crumble. Drain all but 1 TB bacon fat and saute onions, peppers, and corn until slightly browned. (for a healthier recipe I have used turkey bacon and omitted the bacon fat). Add garlic towards end. In a soup pot combine tomatoes, chicken stock, corn water, and vegetable saute. Brinng to simmer. Saute chicken in fajita mix, add enough water to make the mix a marinade. (I put my chicken in the crock pot with the mix and water when I have enough time for it to slow cook). Add chicken pieces plus all marinade to pot. Add crumbled bacon, oregano, salt and pepper. Simmer do not boil, for 20-30 minutes until peppers blend. Garnish with dried corn tortilla chips, avocado chunks, lime wedges, cheese.

another option is to add black beans.

Thanks again for all the hard work everyone goes through each month. This has really helped especially on the hard days. It has also freed up time just before dinner for scripture study. I didn't think trading meals would help our spirituality! Nora your idea is brilliant!
