So we're trading again on the 18th of July. I filled Kim and Tressa's spots with ladies from my old neighborhood. As soon as you know what your making let me know. We've enjoyed everything from last months trade so far, it's been delicious.

Trade this Friday

We're trading thsi Friday at 12:30. See you there--I'm totally addicted to the meals so thanks for cooking for me! And Robyn, we made the lime chicken and it was delish.

Free Recipes & Yummy Chicken

Hi everyone! We are so enjoying all the meals we received on Friday. My husband is so excited about all the BBQ-it is his favorite.

I wanted to let you all know about this free magazine I get that has a lot of great recipe ideas. It is published by Kraft Foods and comes out 4 times a year. A lot of their recipes are very family friendly and could probably be frozen. They also have a lot of great photo's, shopping ideas, and healthy snack ideas. Anyway check it out if you get a second. You can go to kraftfoods.com and just sign up to have it mailed to you-it is called "Food & Family."

I also wanted to post this great summer grilling recipe. It doesn't freeze well, but it is so yummy.
Garlic-Lime Chicken

1/4 cup lime juice
1/4 tsp. ground red pepper
1/3 cup olive oil
1/4 tsp. ground cumin
1 1/2 lbs. boneless skinless chicken breasts
1 tsp. garlic powder
1 tsp. cilantro leaves (finely chopped)

1. In a glass dish or a large plastic bag, combine ingredients.
2. Add chicken, turn and coat. Refrigerate 15-20 min.
3. Remove from marinade and grill or broil 5-7 min. per side.
Baste with the leftover marinade during cooking.

The acid from the lime juice will start to cook the outside of the chicken, so you don't need to marinade it more than the suggested time.
I have served this over rice. It is also very good used as the meat for fajitas.

Location Changed!

Next Friday, the 18th, we will be trading meals at Kim Crapo's House (8227S. 5220 W). It's just down the street (north) from mine. Plan on bringing 10 meals to trade. Sign up when you know what your making.

Yummy Joes and Fajita Soup

We had the fajita soup this week with unexpected company and it was a hit. Me and my sister want the recipe! I might call you Marianne or if you have a minute could you post it?

So the Lasagna rolls that I did last time is better baked uncovered. I put covered in the directions because I'm paranoid about food drying out but there is plenty of liquid.

I will be out of town the whole week before our swap. If you need freezer space you can bring it by the week before. I'm leaving Monday morning. I also might not be back before 12:30 on Friday, so maybe we could bump the time to around 4:30 or 5:00. D track will be off and it is a Friday, but it's right before dinner and you might score a meal you could just go home and eat. I ask around as well.

An opportunity to help

About a month ago there was a horrible car accident on Bangerter.

Anyway this family lives just up the street and I was wondering if there wasn't something we could do to help. Since we're making meals anyway--why not make an extra? I was thinking 8x8 size of 3-4 servings with really good instructions that we could fill his freezer with. If you want to help, bring it to the trade and I can take them all over on Saturday night when I take them dinner.

I haven't talked to everyone yet but bring 10 meals to trade away this month. I'm feeding lasagna to the kids the night I cook. Happy Cooking!

I thought I'd start a post where we could comment in the comment section about the meals that we just started to dig into. We had the shells last night and they were delish. Also we had Salsa Chicken and that was hearty and wonderful as well so thanks, Brandy and Marcy. I have to laugh at the leverage I have with my kids now. "Elise and Isaac eat this all the time, it's their favorite." It works.

If you thought they were good here's the recipe. This makes 36 enchiladas or three pans of 12 each--make one, freeze two..... Or four pans of 9... or 6 pans of 6..... you get the idea.

In one bowl mix:
6 cups cube cooked chicken (about 3 lbs.)
2 cans rinsed black beans
2 cans tomatoes with green chilies (drained but keep the juice)

In a second bowl mix:
Juice from the chili tomatoes
3 16 oz containers of sour cream2 cans cream of chicken soup
6 cups cheese (I like the fiesta blend)



*Lay out 36 8in. tortillas and portion out 1/4 cup of chicken black bean mixture on each one.
*Then top with a liberal tablespoon of cheesy cream mixture on each using only half and saving the other half for the top.
*Roll and line in a 9x13 pan or in a gallon freezer ziploc.
*Spread the remaining cheesy cream among the three pans or divide it into sandwich or quart size ziplocs to freeze flat.
*Top with two more cups of cheese each.
*Bake 350 for around 30 minutes. Just until bubbly.

So we're getting together to trade, Friday the 22nd. This time around there are 11 total. Is there anyone that would like a bye? We welcome Mindy from Logan! She's a guest swapper wanting to load the freezer before her baby comes. So if you're up on meals leave a comment and you can come back for March. If everyone wants food--we'll just make 11 or bring 10 and you won't take home one of your own.

Also if you know what you're going to be making--You can post it on the side.

I'll be putting a few recipes on here from my "cookbook" that I got for Christmas that had some good freezing ones. Also if you have any good ideas or come across any--post away.

Loved the Tortilla soup Brandi so if you get a chance can you post it?
