Here's the recipe. <BR/><BR/>5 slices bacon<BR/>Lawry's fajita mix (I found this brand is the best).<BR/>1/2 green pepper, diced<BR/>1/2 red pepper, diced<BR/>1 onion, diced<BR/>1 can corn, reserve water<BR/>1 can crushed Mexican style tomatoes(I just use my bottled tomatoes from my garden)<BR/>3-4 chicken breasts, cut into bite-sided pieces<BR/>3-4 cloves garlic, chopped fine<BR/>3 cans chicken stock (or bullion and water).<BR/>1/4-1/2 tsp oregano to taste<BR/><BR/>Fry bacon and crumble. Drain all but 1 TB bacon fat and saute onions, peppers, and corn until slightly browned. (for a healthier recipe I have used turkey bacon and omitted the bacon fat). Add garlic towards end. In a soup pot combine tomatoes, chicken stock, corn water, and vegetable saute. Brinng to simmer. Saute chicken in fajita mix, add enough water to make the mix a marinade. (I put my chicken in the crock pot with the mix and water when I have enough time for it to slow cook). Add chicken pieces plus all marinade to pot. Add crumbled bacon, oregano, salt and pepper. Simmer do not boil, for 20-30 minutes until peppers blend. Garnish with dried corn tortilla chips, avocado chunks, lime wedges, cheese.<BR/><BR/>another option is to add black beans. <BR/><BR/>Thanks again for all the hard work everyone goes through each month.
